Mixed Vegetable Fry


"A semi dry mixed veggie for roti and rice. Add any vegetable of your choice and cook up a yummy side.".


INGREDIENTS

Carrot - 1 chopped into bite size pieces
Potato - 1 chopped  into bite size pieces
Capsicum - 1 small chopped into bite size pieces
Beans - 10 string removed chopped into 1/2 inch pieces
Cauliflower - 10 to 15 buds
Onion - 1 large sliced
Frozen Corn & Peas - 3 Tbsp each
Paneer - 25o grms cubed 
Tomato - 1 large chopped
Garam Masala - 1/4 Tsp
Jeera Powder - 1 Tsp
Sabji Masala - 2 Tsp
Pepper Powder - 1/2 Tsp
Tumeric Powder - 1/2 Tsp
Salt - 1/2 Tsp
Sugar - 1/4 Tsp


Directions

Heat wok
Pour any oil 2 tbsp
Rub turmeric powder on paneer 
Fry them till they get golden tinge around the edges
Set aside
To the remaining oil, add all the veggies from carrot to onion
Fry for 4 mins or till the onions turn translucent
Then add the capsicum, defrosted peas and corn 
Fry for 2 mins
Spinkle all the dry spices 
Mix well
Then sprinkle sugar, salt 
Give fine stir
Add the tomato and fry for 2 mins
Then close the lid and cook till potato and cauliflower 
are done
Serve this with roti or rice/dal.

Tip :- You could also mix this with hot rice (and salt to 
taste) and turn this into masala fried rice.
