"This is a simple veggie Lau/Lauki dish spiced up a little and decorated with "crunchyness" of Bori (bengali vadi). Serve with Rice or Roti".
INGREDIENTS
Bottle Gourd - 1 Medium Peeled Finely Chopped
Bengali Vadi - 1/4 cup
Kala Jeera - 1/2 Tsp
Whole Red Chilly - 1
Turmeric powder, Salt - 1/2 Tsp
Sugar, Red Chilly powder - 1/4 Tsp
Tomato - 1 Large Chopped
Ginger - 1/2 Tbsp
Green Chilly - 1
Directions
Heat a pan
Pour mustard oil 2 Tbsp
Heat oil to smoking point
Add the vadis and fry constantly till golden brown
Set aside in bowl
To remaining oil, add kala jeera and whole red chilly
As they sputter, add ginger paste and green chilly
Give a quick stir
Fry till the tomato turns mushy
Then add bottle gourd and mix well
Sprinkle all the dry powders and mix
Cook under cover for 20 mins or till the bottle gourd is cooked
Then add the fried vadis and garnish with corinader leaves
This can be served with rice and dal or as a side with roti
