A simple stir fry with pumpkin zested with panch phoron and spiced up with red chilly powder . Just makes an awesome side enjoy with rice dal or Roti.
INGREDIENTS
Pumpkin - Peeled +Chopped into Bite Size
Whole Red Chilly - 1
Panchforon -1/2 Tsp instead Jeera - 1/2 tsp can be used
Pinch of Asafetida
Sugar , tumeric, red chlly powder , salt - 1 tsp each
Mustard oil / Normal oil- 2 Tbps
Directions
Heat a pan Pour mustard oil 2 Tbsp
Heat to a smoking point
Add tempering ingredients
As they sputter
Add the pumpkin Fry for 2 mins or till they get a little tinge on them
Sprinkle all the dry powders and mix well
Cook undercover for 10 to 15 mins or till pumpkin turns soft
Garnish with coriander leaves or Roasted cumin powder and ghee
Goes well with hot Rice and Dal / Roti accompanied with Egg omellet
