Korola bhaja or bitter gourd fry is a simple Bengali fried dish zested with turmeric and salt. It is fried to golden brown with lots of tosses and turns to get there. It is a mouth and system cleanser to be enjoyed with rice.
Ingredients
Bitter gourd - 2 medium sized chopped finely
Mustard oil - 1 Tbsp
Turmeric powder - 1/4 Tsp
Salt - 1/4 Tsp
DIRECTIONS
Heat up a wok on high flame
Pour 1 Tbsp of mustard oil
Heat mustard oil to smoking point
Sim the flame
Add the finely chopped bitter gourd
Increase the flame to high
Fry for 2 mins through and through
Then add turmeric powder and salt
Continue to fry for 2 more mins
Then reduce the flame to medium
Stir on and off till the bitter gourd gets tinged
Set aside
Serve with steamed white rice..
