This is simple south indian style of curry made with ridge gourd. Lite on stomach and health and quick fix for Lunch or Dinner.
Ingredients:-
Ridge Gourd - 1 Kg
Onion ,Tomato - 1 Large
Urad Dal , Channa Dal- 1 Tsp
Mustard Seeds - 1/2 Tsp
Curry leaves - 4 to 6 leaves
Whole Red Chilly - 1
Coriander powder , Red chilly Powder , Salt - 1Tsp
Pepper powder, Turmeric, Sugar - 1/2 Tsp
Milk - 1 Cup
Grated coconut - 2 Tbsp
Coriander Leaves - 2 Tbsp chopped
Directions
Heat Pan
Pour 2 tbsp oil
Add urad dal and channa dal as they turn light golden
brown add whole red chilly by splitting into two, then
mustard seeds followed with curry leaves
As the sputter add onions ... salute the onions as they
turn translucent add ridge gourd ... mix and then fry
them for 2 mins.. u will see water oozing out .. now
add the dry powders and mix well .. remember i m cooking
on high flame ..as you adding ingredients the
ridge gourd is getting cooked.. now add tomato to get
sourness into the curry .. mix well
Now the spicy level varies from person to
person so I just drop few whole green chilly so who ever
wants can squeeze and make it spicy..
now cover and cook for about fives mins
then pour 1 cup of milk ... I add milk to give creamy
texture to curry ... further cook for 5 mins or till its done
Garnish with grated coconut and coriander leaves .. give
nice finishing stir and serve.. with rice and roti..
You can make this recipe while making roti or if want to
speed up the process and then add from ridge gourd
onion tomato milk the dry powders salt and sugar and
give 2 whistle and then temper them with the tempering
ingredients.
This recipe is lite on stomach people on diet ..post natal
moms .. even for the young ones will enjoy this!!
