
Ingredients
Wheat Flour - 1cup
Oil to mix the flour - 2Tbs
Salt - 1pinch
Sugar - 1pinch
Jeera powder - 1/2Tbs
Dhaniya powder -1/2Tbs
Green chili - 2 finely chopped
Coriander leaves - 1/4 cup finely chopped
Ajwain seeds -1/4Ts
Methi leaves -1.5 cup
Amachur powder -1/4Ts
Ginger -1/4 inch garteds
Warm Water to mix the flour
First of all.. clean wash the methi leaves well and place it in strain ..
In bowl measure the wheat flour.. with is add all the dry powders -Salt - 1pinch, Sugar - 1pinch Jeera powder - 1/2Tbs,Dhaniya powder -1/2Tbs, Ajwain seeds -1/4Ts , Amachur powder -1/4Ts, and mix well.. now add 2Tbs of oil.. then Green chili - 2 finely chopped,Coriander leaves - 1/4 cup finely chopped,Ginger -1/4 inch garted.. and mix once again and set aside...
Take some hot water add Methi leaves -1.5 cup ..wait for 2 seconds.. strain it and mix with flour.. see to that all the leaves are mixed well and now add little warm water and mix the flour.. as you mix for roti... take a semi- wet towel cover the flour with that and set aside atleast for 1/2 hrs...
Then make equal balls.. flatten it up and fry it on a thawa with little oil... and enjoy with,Eggplant with curd..amazing one.. i tell u...try it...i am it will be hit in your home..
Eggplant with Curd..
Makes for 2 Ingredients Eggplant - 1 medium chopped into medium pieces Green Chili - 2 Curd -1 cup Oil - 2 tbs Mustard seeds - 1/4Ts Curry Leaves - 4 to 6 Whole Red Chili - 1 Onion - 1/2 in medium finely chopped Coriander to garnish Coconut to garnish First .. pressure cook the eggplant and 2 green chili or boil the eggplant with 2 green chili to soft... After it cools down.. strain the water.. and smash with the curd and set aside.. Take a pan add 2 tbs oil .. heat it to a good temper.. add mustard seeds.. as they crack add curry leaves and whole red chili .. and give stir.. now the onions and fry .. till onions try transparent..and get a reddish tinge.. mix this with the eggplant... add salt and garnish with coriander and curd.. this can be had with rice too.. and even it can be made without curd...

Next time I meet u dear and u can get hold of a kitchen, i want to eat this eggplant dish and my favorite palav again. :)
