Makes for 2
Ingredients
Kumro - 1/4kg cut into small bite size pieces
Mustard oil - 2 Tbs
Whole Red Chili - 2 broken to into half
Panchphoran - 1 Ts
Hing - 2 pinch
Ginger- 1 inch grated
Turmeric - 1Ts
Red chili powder - 1.5 Ts
Salt to taste
Coriander to garnish
Take a thick bottom pan heat mustard oil to smoke point... add Panchphoran along with whole red chili followed with hing and ginger give fine stir.. add the pumkin.. and stir... fry for about 2 mins then add turmeric +salt+red chili powder and stir... reduce the flame to low and cook undercover for pumkin to cook.. about 10 mins .. the texture of this smashed.. one... garnish with coriander enjoy with hot roti... amazing one i tell ;)
I dont add sugar.. as pumkin is usually sweet.. if you want you can add a 1/4Ts of sugar.. even this preparation can done with banana squash too...
