Bengali Veggy side dish of Potato and Cauliflower to go along with rice and dal

Ingredients:-
Aloo- 1 large chopped in small cubes
Gobi - 8 of one small head cut into small pieces
Kalonji- 1/4 Ts
Green Chilles - 3-4
Ginger - 1/2 inch
Mustard oil - 6Tbs(Mustard oil can be replaced with Vegetable oil)
Turmeric - 1/4 Ts
Salt
Coriander for garnishing
Take a thick bottom pan, add some mustard oil heat until the smoke point (be generous with oil for this dish)...after it becomes clear, add Kalonji, green chilles and ginger...then add potato and gobi...fry for 3-5 mins, add salt, turmeric...mix once... lower the heat,cook undercover for about 8 to 10 mins...
(Note- Dont add water as the veggies will get cooked in steam itself)
...after it's cooked, granish with coriander.
