Ingredients
Baby Potato - 15 par boiled and peeled
Oil - 4Tbs
Whole Dhaniya - 1/2 Tbs
Sauf - 1/2 Tbs
Gringer - 1 inch grated
Green chilly - 3 split into half
Red Chili Powder - 1Tbs
Dhaniya Powder - 1Tbs
Jeera Powder - 1 pinch
Garma Masala - 1/2 Tbs
Methi powder - 1 pinch
Black salt - 1/4 Ts
Salt to taste
Sugar - 1/4 Tbs
Tomato - 1 Large finely chopped
Coriander to garnish
Note :- If you do not have Methi powder and Black salt .. you could use Tadka masala or chat masala
First boil the baby potatoes and peel the skin..and set aside. Take a thick bottom pan add oil .. when it reaches a good temper add dhaniya and sauf .. as it cracks add the green chilly and ginger... turn the heat to low.. then add the dry powder ...i.e., Red Chili Powder,Dhaniya Powder,Jeera Powder,Garma Masala,Methi powder,Black salt..now you need some moist so add the tomato if required add 2Tbs of water .. as you see the tomato turning soft.. add the peeled potatoes and stir once add the salt and sugar,cook undercover for about 5 to 8 mins under low flame... garnish with coriander. Serve with hot Luchi...or stuffed cholar dal parota...etc or to keep it simple and neat.. it goes well roti too....
